Hi Darryl,

Have a looksie at: http://www.alienraid.org/ it has some interesting  
info regarding Xraids connected to non apple hardware.

On another note:
I had a play with ZFS using OS X last weekend.  (via ADC download)
very impressive!
Pity it 's not ready for commercial release but it was already at  
version 6 if I recall.
I tested on a G4 (digital Audio testing rig) with 8 x 250GB drives  
using 2 ACARD PCI PATA controllers.

Have you considered Solaris (for x86) assuming ZFS is included in it  
now, as it really helps with backup strategy being able to take  
snapshots.
JBOD the Xraid and run ZRaid2. (equivalent to raid6, something the  
Xraid cannot do)
