I do much the same thing with my printers (at each logout) but haven't
seen such a problem with Acrobat 8.1. The PDF printers don't feature
anywhere in my lab builds either.
All I can recall doing is running all the Adobe apps as an admin
before making the default home directory.
One thing you could look at is the self heal file inside the Acrobat
package contents... .../MacOS/AcroENUPro80SelfHeal.xml
you may be able to turn off that 'feature'.
