A couple of suggestions:

1.	put a laptop with a DVD drive and firewire (!) into Target Disk  
Mode and plug it into the XServe via Firewire. the XServe will see the  
disk in the drive

2.	(my favourite) Partition a drive into 3 partitions - 2 small (about  
10G). Use Disk Utility to Restore the install media onto one  
partition. Use the OSX Client installer to Restore to the second  
partition.

Go nuts - put the combo updaters for both onto one of the partitions,  
use the remnant for backing up the server once its installed
